Chicken, Lime, tortilla soup
Saute onion, garlic, jalepeno and throw into slow cooker with chicken, red pepper, celery, chicken broth, lime juice, cumin. Shred chicken and add onion, cilantro, avocado, sour cream or non fat yogurt. Instead of tortilla chips I used taro chips they are my fav. Yum, try this one you can't screw it up.

My friend Megan is 20 hours into labor...ppppuuuuusssshhhhhh! So excited for them, I guess that means I am ALMOST ready to have kids:)

My brother and I ate prawns for the first time on the North Shore at Romy's with our good friends Megan and Zach. They are due with their first baby tomorrow, but you would never know unless you saw her from the side. They are so awesome and so easy to hang out with.

Waimea Bay, beautiful day. I got in the water for the first time, even though my doctor said to wait a month, I almost made it:) I saw a huge school of fish, and Zach dove down into the middle of them for me to take a picture and my camera died. It was still amazing.

This is my brother with perfect form.

I love Hawaii, today was one of those days that I can't wait to go to bed, so I can wake up early and know it will be just as beautiful as today was.

Coco learned how to steal figs from my tree today. I guess I can share:) Kevin's mom and brother get here a week from tomorrow and then Kevin is right behind them. I will get to see him exactly one month after my surgery when he left me drooling with one arm:) It is crazy how one month will make you appreciate the little things. I can't wait!

Getting stronger everyday!
Today was a good day, I got to do a good walk up and down hills through a Botanical garden with good friends (gimp) Amy Eck and Mike Abbott. Amy has talked me through this whole surgery because she also broke her collar bone not too long ago. She is awesome on a bike and just did Leadville 100 with a broken arm. She is crazier then me.


One of my new favs, pineapple banana coconut upside down cake.

Cook pineapple in 1tbs butter until golden brown put in bottom of pan, then mix:

1tbs butter, 3 eggs, 2 bananas, 4 tbs coconut milk, 1tsp vanilla, 1/2 cup coconut flour, 1tsp baking powder. Mix and put on pineapple, bake for 30-40 min at 350.

Coconut Day
Today was a good day, I woke up from some pain yesterday with more feeling in my shoulder like the nerves were growing back. I got to hang with my dog Coco Nut today and my friends Jesse and Susie. My brother also came home early so I could fix him some Paleo pumpkin pie. He said it tastes earthy and wholesome, he had me laughing when he said he needed some carb sprinkles and put brown sugar on top, ok maybe that means I shouldn't of skimped on the honey, it called for 1/2 cup and I put 1/4 of a cup:) I thought it was yummy.

1 1/2 cup pecans, hazlenuts, or any nuts you have around the house (unsalted)

4 tbls good butter, mix nuts to flour consistency and then add in butter and pinch of salt. Bake at 350 for 10 min. Then mix a can of organic pumpkin, 2 eggs, 1/2 honey (don't skimp:), 1 tsp cinnamon, 1 tsp cloves, 1 tsp fresh ginger, and 1/2 coconut milk. Put in crust and bake together 45 min.


Curry night with steak, purple potatoes and carrots from the garden, left over zuccini, and red pepper, onions, garlic. Add coconut milk, curry, and siracha

Grill Night
Asparagus and zucchini grilled in foil topped with a fillet, and a portabello mushroom made like a pizza, jalapenos, tomato sauce and cheese. I love pizza so this satisfies my craving when my brother makes a pizza for lunch. Pumpkin pie tomorrow with whole made nut crust, sweetened with honey. I will try to put the recipes for my friends that are interested.

My first doctors appt was today and even though he gave me good news that it looks good and I am healing perfectly, I was hoping that he would say I was ready to surf or ride, but he said give him another 4 weeks of RELAXING and then maybe. The hardest thing for an athlete to hear, but I think I will manage:)

Fresh from the garden

I have been spending more time in the yard and garden, I can rake with one hand:) I am in the process of trying to eat most of it so I can start fresh. Right now we are producing tons of herbs, eggplant, sweet potatoes, onions, kale, avocados, papayas, ruby red grapefruits, and all of the above. I feel rich today and loving all the time in the yard!

Tropical MacaroonsIf you know me, you know I never measure:) But here is a rough estimate, 2 cups coconut, 2 egg whites, 1 cup pineapple, 1/4 cup nuts - macadamias, 2 tbls coconut milk, 1 tbls butter or coconut oil, and a couple tbls of cocoa powder unsweetened. The pineapple sweetens it, but if you need it sweeter at a couple tbls agave nectar or honey. Food process everthing, fold in frothy egg whites and Bake at 325 until they dry out slightly. You can also crumble them up and put them in milk...yummy. My days are getting brighter and sweeter.

Cooking with one arm:)
Things have gottem alot better since my crash. I am already dreaming of retirement with way more time to...relax. It was hard the first week, but I am settling in and really starting to enjoy this down time. Although with all this cooking and eating, I really hope I can work out soon.:)

Blueberry pie Paleo style

Chia seeds are the greatest for thickening most anything. I use them for pudding, pies, etc. They are like tapioca balls, but high in fiber.

Home made crust, dates, nuts, lime, and a little butter.

Meatza, yes this is pizza with meat for the crust, pretty funny coming from vegetarianism. I put a filet, can of tomatoes, and a bunch of veggies in the crock pot. Slow cook all day. Then mix the filet with an egg and flattened it into a pan. Cook for 10 min at 450. Then blend your sauce, you can keep some of the veggies to mix back in, and spread on the meat. Put good peperoni and cheese to top and broil. I love broil, I always burn things:) Soooo good!





Breakfast includes fresh fruit with nuts, cinnamon, and almond milk


Or eggs in the morning with spinach, kale, and onions from the garden.

24 Hours of hell in Paradise = broken bones
I was way too excited to be on my bike after a long week of mids at work and finalizing my first Masters class with a six page paper and final exam. I was ready to let loose. I did not preride the course, but had ridden out there before. So I started my first lap as hard as I could go. I hit this narly down hill and new I should of walked it but I already committed. I braced my self with my left arm when I flew over the handle bars and crunch. I had to walk out and drive to the hospital, when I was having so much fun. Coco had 20 friendly dogs to play with and they all ran around together without leashes. She did not want to leave. Next year I will be back, but maybe more cautious.

Pre-Op tomorrow and surgery on Wed.
