My first prickly pear jelly session turned out amazingly. Kevin even tried it on his english muffin and liked it, the true test. It has a unique flavor like lyche or dragon fruit from hawaii and it grows on you. I have heard it is really good for you also, bonus. Let me know if you want some, my mom and Kevin can only eat so much.

Sounds delicious! I've been whipping up some things in the kitchen these days too while I'm waiting for this baby to arrive:) I harvested some zucchini and basil and made: curry-stuffed zucchini, zucchini bread, zucchini pancakes, pesto, more pesto, and cheesecake (not from our garden:) I'll trade you some pesto for some jam...
Spring you are amazing! I have been wanting to do this with my salsa. How did you get the labels done? I'm thinking about starting a little burrito bike cart business...fitness and eating what a great combo.
